I am an unrepentant foodie. I love food. In fact, I love it so much that I woke up today thinking about my kick-ass pound cake that I haven’t made in a few months. But that’s not the recipe I’m sharing today. <g>
I’m always looking for ways to make classic recipes easier and lower in calorie. Sometimes I end up murdering my dinner but hey, that’s half the adventure. <g> This is one of my favorites, Chicken Cordon Bleu, and it’s super-easy to prepare and your diners will think you spent hours in the kitchen. Heck, even Mom likes this one and she doesn’t like much of anything. LOL! It also heats up well in the microwave so you can take it for lunch the next day.
Chicken Cordon Bleu
4 boneless, skinless chicken breasts
4 slices of Swiss or Provolone cheese
4 thin slices of smoked ham (you can use lunchmeat but don’t use chip-chopped ham – real ham please <g>)
1/4 cup flour
2 eggs beaten
salt and pepper to taste
bread crumbs or panko
basil, oregano, garlic and onion powder
4 teaspoons of butter
1 can of chicken broth (14 ounces)
1 cup of skim milk
1. Pound your chicken breasts to 1/4 of an inch thickness. (this is important for it to cook evenly)
2. Salt and pepper each side of the breasts.
3. Lay out the breasts then top with slice of ham and slice of cheese.
4. Roll up each chicken breast then secure with a toothpick. (Just remember you used them when you sit down to eat!)
5. Roll each bundle in the flour and shake off the excess.
6.Mix the panko / bread crumbs with your spices garlic, onion, basil etc. Dip rolled chicken in beaten egg then roll in panko / bread crumbs.
7. Place in baking pan that has been sprayed with cooking spray, seam side down.
8. Lay teaspoon of butter on each bundle and put in a 350 degree oven. Cooking time depends on the size of your rolls / chicken. Start checking them at 35 minutes and when the juice runs clear it’s done. Usually it’s close to 45 – 50 minutes when I make them.
The Sauce! Once your chicken is in the oven it’s time to start your sauce. Bring chicken broth to a slow boil. Take your milk and a few tablespoons of flour and blend together until smooth. Add to boiling broth and season to taste. (salt, pepper, basil etc) Simmer until thickened. Serve over chicken and enjoy!
Damn, now I’m hungry. <g>
